There are many ways to make Potato pickle this is one of the way to prepare the pickle. It is best if one can use small new potatoes they taste best. This pickle will last for 2 days if refrigerated otherwise it should be eaten the very day. Green peas can be used with this recipe and if there are no green peas then dried peas can be used as well, just soak the peas in the water over night, and boil them till the peas are cooked, remove the water and mix the peas while preparing potato pickle.
Homemade potato pickle
Ingredients:
5 medium size potatoes (preferably red potatoes)
100gm black or white sesame seeds (roasted and powdered)
6 pieces Green Chillies (slit from the centre and cut in to half)
½ cup lemon juice
3 table spoon mustard oil
½ tea spoon red Chilli powder
Salt to taste
½ tea spoon fenugreek seeds
½ tea spoon Jimbu(optional)
½ tea spoon turmeric powder
1 tea spoon green coriander leaves chopped
1 cup water (Add more water in you feel the need)
Method:
Boiled the potatoes, peel and cut them in to 1cm cubes, if using small potatoes just cut them into half. In a bowl mix sesame seeds powder and cut potatoes add little water and mix. Add salt, chilli powder, half of chopped green chillies, lemon juice and mix properly using your hands. To make the gravy a little thicker, mash 3-4 pieces of potatoes with your hands and add the remaining water and mix once again; then keep aside. Heat the small pan then add oil, add fenugreek seeds let it crackle for a while and when it turns brown add green chillies,as the chilles change color about ½ a minute, stir with spatula add Jimbu, add turmeric powder , stir once and pour it to the potatoes mixture we prepared earlier. Stir the pickle once and garnish with coriander leaves. Now the pickle is ready. Serve as side dish with rice, Roti and beaten rice. It can be served as a side dish with western food as well.
